So there are a couple ways to do this.
1. I think within Fiery 6 there is an option to use the G7 methodology when creating your calibration. You would have to speak to your EFI rep to find that out.
2. You could use the Graphics arts package within the fiery front end to import a G7 curve after your calibration.
3. Or you could use the TC1617 chart when building your profiles to make sure that the gray balance is taken into consideration fully when building the actual profile.
To me, so long as the calibration will always get you back to the same place (stake in the ground), you can color manage outside of that and have consistent results.
